Most marketers group SEO into a few practical buckets rather than a fixed number. The core types are:

I don’t think putting an exact number on the types of SEO is particularly helpful, as the categories tend to overlap quite a bit. On-page, off-page and technical SEO cover most of the fundamentals, while local, ecommerce and international SEO are more about applying those fundamentals to a particular situation.

There are other areas too, such as image and video SEO, but they’re usually part of a wider approach rather than completely separate disciplines. For a small business, the more useful question is probably which areas actually matter for the customers it’s trying to reach. A local tradesperson, for example, would usually have very different priorities from an online retailer selling across the UK.
